Labor Day is a public holiday in honor of working people...we are supposed to rest and enjoy together but the host of a labor day BBQ always ends up haggered and stressed making and getting all sorts of drinks for everyone! Here is one labor day goodie that does not take a ton of work. Most of the work can even be done the day before so it's all ready to go before your guests arrive. And if you are going to cut up a watermelon anyway you may as well make it look pretty! (And it never hurts to add vodka or rum to a fruit!)
Here is the recipe for an easy crowd pleasure that is refreshing and will add a little extra to your party without making you act as bartender all day...
Step 1- Cut the top third of a medium watermelon off and level the other end so it sits up straight. Scoop out all the watermelon insides.
Step 2- Place all the flesh (in batches if needed) into a blender or food processor until liquified. Pour everything from the blender through a strainer and place the juice back into the watermelon, cover with plastic and chill for an hour (or even make it the night before and chill overnight!)
Step 3- Before your guests arrive, combine the watermelon juice with 2-3 cups seltzer and if you'd like, add vodka or light rum! Put everything back into the watermelon and your guests will have all the boozy and refreshing drinks they need for the afternoon!
